  • 1 lb ground beef (80/20 or leaner)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • Salt & pepper, to taste
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth
  • 1 can (15 oz) red kidney beans, drained & rinsed
  • 1 can (15 oz) black beans, drained & rinsed

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for 3–4 minutes until soft.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in ground beef, breaking it up as you brown it for about 5–7 minutes; drain excess fat if necessary.
  4. Mix in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper; cook for another minute to bloom the spices.
  5. Incorporate tomato paste followed by diced tomatoes and beef broth; stir well.
  6. Add both types of beans and let simmer uncovered for 30–40 minutes until thickened, stirring occasionally.
  7. Adjust seasoning to taste and serve hot with desired toppings.
