- Salt & pepper, to taste
- 1 can (6 oz) tomato paste
- 1 can (15 oz) diced tomatoes
- 2 cups beef broth
- 1 can (15 oz) red kidney beans, drained & rinsed
- 1 can (15 oz) black beans, drained & rinsed
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion for 3–4 minutes until soft.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in ground beef, breaking it up as you brown it for about 5–7 minutes; drain excess fat if necessary.
- Mix in chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper; cook for another minute to bloom the spices.
- Incorporate tomato paste followed by diced tomatoes and beef broth; stir well.
- Add both types of beans and let simmer uncovered for 30–40 minutes until thickened, stirring occasionally.
